Tortilla de Papa

Ingredients:

¼ cup olive oil

½ cup chopped onion

1 crushed garlic clove

8 eggs scrambled

2 to 3 cups chopped or shredded potatoes

Salt and pepper to taste

Optional: veggies

Sauté onion and garlic. Add potatoes and eggs. Cover and cook on low heat until firm. Flip and finish cooking.
